Green Goddess Dressing

This dressing is not only amazingly tasty it’s also beautiful and was made after a beautiful story so eat up and think of a green goddess.
Ingredients -
1 Cup Mayonnaise
3 Flat Anchovy Fillets (minced)
1 Scallion (chopped)
2 Tablespoons Fresh Flat Leaf Parsley (chopped)
2 Tablespoons Fresh Chives (chopped)
1 Teaspoon Fresh Tarragon (chopped)
1 Tablespoon Taragon Vinegar
Salt and Freshly Cracked Black Pepper
 
Preparation:

1. In a food processor puree until smooth the mayonnaise, anchovy fillets, scallions, parsley, chives, tarragon and vinegar.

2. Add the salt and pepper and season to taste.

Anchovies
Because of the anchovy filets in the dressing it will only keep in the refrigerator for up to 4 days. It’s delicious so it won’t last that long anyways.

Mayonnaise

If you don’t have mayonnaise per 1 cup of mayonnaise called for in a recipe you can substitute:
· 1/2 cup yogurt and 1/2 cup mayonnaise
· 1 cup sour cream
· 1 cup cottage cheese pureed in blender
